A healthy lunch recipe prepared with Oyster Mushrooms, rice broth and an assortment of spices. Coupled with white or brown rice, this makes a very healthy lunch item.
Tear oyster mushrooms into halves, and clean in hot water. Allow to drain until the spice is ready. Mix tomatoes, ginger, garlic and chilli in a blender. On a hot pan, heat vegetable oil. Cumin powder. Coriander powder. Put in the mixture. Add turmeric powder. Cook for 1½ minutes. Add the onions. Cook for another minute. Add the mushrooms. Turn the mushrooms around the mixture for about 1½ minutes. Salt to taste. Vinegar 1 tbsp. Aamchur powder. Garam masala and meat masala. Add water and allow it to cook on high flame for two minutes. Add a cup of rice broth and cook for six minutes on high flame. Allow the sauce to settle for a minute while covering the pan with a lid. Serve with white or brown rice and some spring onions.
